— Le Concept

We started this room because no one else would let us cook this slowly. Aurelle is a love letter to the long meal — the second pour, the cheese after dessert, the cab still waiting at midnight. — L. Aurelle, founder

— La Cheffe

Léa Aurelle cooked her first paying meal at fourteen, on a wood stove, for twenty-two people.

Trained at L'Astrance and the late Robuchon Atelier, Léa opened Maison Aurelle in 2018 with one rule: no dish leaves the pass until she's tasted it that night. The menu changes weekly, and almost nothing repeats within a season.
